A LITTLE MORE ABOUT ME….
I’ve always had a love for food (both cooking and eating – yum!) since I was little. I received my cooking chops from my Dad (Charlie) who grew up in South India – land of herbs and spices. He taught me how to make mouthwatering dishes. My baking skills come from my American Grandmother (or as I like to call her Grammie). I don’t think the family had one meal at my Grammie’s that didn’t include some sort of baked good – and my all-time favorite Grammie’s Cookies. The style of cooking that I’ll be sharing is a mashup of my upbringing and my passion for travels. I loooove ethnic flavors (Indian, Asian, Mexican tend to be my favorite cuisines) along with American staples.
If I’m not in the kitchen – I’m globetrotting with my partner in crime husband Gary. I have a love for wildlife and nature that can’t be contained and would rather be hiking or exploring new places any day of the week.
The WAKE UP CALL…
I’ll never forget the morning when my husband called to deliver the news his father had passed away – at a young 73. He had health complications for some time, starting with his first heart attack when he was 50. Unfortunate genes plagued him with diabetes, high blood pressure, high cholesterol, stroke and multiple heart issues. Funny thing about genes: the good the bad and the ugly get passed down whether you want them to or not.
My honey bunny, who by American standards, led a very healthy lifestyle up until this point (thanks to his beautiful wife not letting him deviate). He maintained a healthy weight, was eating “right” and worked out 4 – 5 times a week. His annual medical checkup we assumed would all be ok, right? But the devil is in the details…or in this case the blood work. He had high cholesterol, high blood pressure and pre-diabetes (who even knew there was such a thing!).
Determined I wasn’t going to lose the love of my life to one of these awful diseases, I went into research mode. And the book that changed it all….The China Study. After reading study after study I had the realization that food really IS the best medicine. And that my ugly genes that I worried about (Alzheimer’s, thyroid issues and psoriasis) could also be prevented or even reversed! And so a plant based lifestyle experiment began!
MAKING THE VEGAN/PLANT BASED TRANSITION…..
I informed my husband of the change we’d be making and the science behind why I wanted to give vegan a try. He was a little apprehensive about what types of vegan foods we would be eating but was willing participate.
I was determined for us to be on this vegan journey while enjoying every moment of it. I poured all of my creative juices into every recipe. Luckily my flavors won him over fast. He actually said– “You cook waaaay better now. Before it was boring chicken and vegetables. Now your vegan meals are an experience.” Gee thanks. But in all seriousness I did feel inside a crazy awakening of what I’ve been suppressing for so many years – having fun with herbs and spices! I had no idea that becoming vegan would have that affect.
A month after converting to vegan we both got a health check up with full blood panels. I told our doctor about our new vegan eating habits and he to my pleasant surprise he said “good for you – you will only see better results as you keep this up.” He was right. In fact, we both noticed a drastic change in having more energy, more invigorated workouts, and for me personally, my psoriasis was in remission.
But the truth lies in the blood work – so what happened after just a month of transitioning to vegan? My honey bunny had AMAZING results!!! Normal blood sugar, normal cholesterol, normal blood pressure…. YUP. ALL REVERSED TO NORMAL!!! And for me – normal blood work across the board and drum roll please…..NORMAL thyroid! What?! Hello vegan!!
Friends and family started to take notice too. We happily receive compliments and comments such as: “Did you lose weight?” “Wow your skin looks wonderful!” “You seem to have so much energy what are you doing?” And my favorite when I cook for friends “wait this is vegan??!” They are blown away how delicious vegan food is…and truly forget that it actually is. 🙂
With all these amazing results, we knew we were hooked to be vegan for life.
Another very special thing happens when you really start to think about the impact of what you are eating you start to see the world differently. You will quickly realize what amazing impact you (yes even one person) can have to affect animal welfare and help mitigate climate change. I’m not gonna lie — if feels pretty damn AWESOME!!
THE PURR BABIES….
Ok I admit it! I’m a crazy cat lady. But I blame it on my Mom. 🙂 When I was in 1st grade, she told my teacher there was an emergency and pulled my sister and me out of class. We hopped into the station wagon to find two tiny kittens in the trunk. They were joining our family. BEST DAY EVER!
Fast forward to today where I’ve proudly converted my husband to be as crazy as me. We happily live with 2 purr babies – Emma & Wally.
